Coconut Oil

Wow, moving is the worst!!  I mean, I'm super happy to be in our new house, but moving with kids and stuff takes a long time.  Next time we may just leave the stuff....

We are getting settled in, although every time we go over to grandma's house they say- I wish we still lived at our other house.  It's kind of sad.  I put a whole bunch of pictures up on my facebook page of our house, and I'll load a few onto here hopefully tonight.

So I make pancakes for the boys a lot, and a few weeks ago while I was working out I was watching Doctor Oz (there was nothing else on.  Nothing.) and he was talking about different things you could change in your everyday diet to be more healthy.  One was Coconut Oil.  I decided to try it, and I added it to the boy's pancakes by mixing it into the batter and by using it instead of butter on the griddle.  It is amazing.  Collin can't taste any change, but I think it makes them a little sweeter.  We use a 6-grain pancake mix, and the oil on the griddle makes the outside nice and crispy.  It really is so good.  Some of the ideas they had on the show was to use it for popcorn, and stir fry.  I'm sure those would be wonderful as well.

Ok, I'm off to clean...  Yeah right.  I'm going to read a book.
